Bellingen’s Graziella Garrett is a great Italian cook, just like her mum. She is now supplying her sister-in-law’s cafe in Dorrigo ‘The Cheeky Sparrow’ with sweet treats, much to the delight of Dorrigo locals.
This week Graz has kindly shared her family’s secret recipe for Italian Lemon Biscuits. “These biscuits are very traditional Italian biscuits that were a staple that my mum made when we were growing up or whenever we visited anyone. Now they are a staple for my family too…”
1½ cups Self Raising Flour
1½ tablespoons Milk
⅓ cup Sugar
½ teaspoon Vanilla
¾ cup Icing Sugar
2 tablespoons Lemon juice
½ teaspoon grated Lemon
rind (or to taste)
Sift flour into large bowl, rub in lard until the mixture resembles fine breadcrumbs. Put milk & sugar into small saucepan, stir over low heat until sugar has dissolved: add vanilla. Add lightly beaten egg & warm mild gradually to flour mixture; mix well.
Turn out onto lightly floured surface & knead until smooth.
Take teaspoonfuls of the dough & roll each portion into a thin roll measuring approx. 12cm long.
Make shapes with each strand – whatever shape you like.
Place on a baking tray lined with baking paper, bake in moderate oven for 15-20 mins or until the biscuits are lightly golden.
While still warm, dip tops of biscuits into the lemon icing. Leave the biscuits to cool on a wire rack
